VINEYARD : Grenache 75%, Syrah 25%. 50 years old vines.

GEOLOGY : Single plot with limestone.

YIELD : 30hl/ha

CLIMATE : Warm temperate, Mediterranean and very windy. TAVEL is situated right in the Rhône Valley.

NATURAL WINEMAKING : Sorted manual picking. This Tavel is vinified the same way as our grandfather did. 72-96h of maceration, we vinify incement egg without any input, without filtration and with indigenous yeast. Malolactic fermentation is done. Depending of the vintage, there is a little or no sulphite.

AGEING : 12 months in cement egg.

BOTTLING : Fall.
